For the filling: Whisk cornstarch with water in a small bowl and set aside. Add frozen strawberries or cherries, allulose, and date syrup to a small saucepan, and cook over medium heat until berries soften (about 5 minutes). Add the cornstarch mixture, boil for 1 minute, then remove from heat to cool.

For the pastry: Preheat the oven to 375°F and line a baking sheet with parchment. Combine flour and salt in a large bowl. Cut butter into the flour using a fork or pastry cutter until well-incorporated—working quickly keeps the pastry light. Add two tablespoons of ice water and mix with a wooden spoon. Add up to 5 more tablespoons of water, just enough to form a dough ball that isn’t sticky or crumbly.

Turn the dough onto a floured surface and shape into a disc. Cover with wax paper and roll into a rectangle about Âź-inch thick. Slice into 8 rectangles and place on the baking sheet. Whisk an egg and brush the perimeter of the bottom pastry layers with egg wash. Add 2 tablespoons of filling to each bottom layer, then top with another pastry rectangle. Press with a fork to seal the edges, poke a few steam vents, and brush with optional melted salted butter. Bake for about 25 minutes until golden brown.

For the frosting: Once the pastries are cool, make a royal-icing-style topping by whipping egg whites until frothy, adding lemon juice, then slowly adding allulose. Color it with a few teaspoons of the leftover berry filling (skipping seeds and skins), then frost the pastries. Sprinkle with crumbled freeze-dried berries for a crunchy “sprinkle” effect. Serve immediately, or let the frosting air-dry for up to 8 hours to set completely.
